Meet the Chefs
Executive Chef Freddie Billena is known for his love of local flavors, use of island fresh ingredients, and his innovative approach to Pacific Rim cuisine. He joined Pomaikai Ballrooms after working in the kitchens of the Hawaii Prince Hotel Waikiki, the Royal Hawaiian Hotel, and other venues.
Edward "Eddy" Ayau
Sous Chef Edward “Eddy” Ayau spent 16 years at the Pineapple Room under the mentorship of Chef Alan Wong. Chef Eddy is an artist in the kitchen and adds a bit of personality to every dish he creates.
